APPLE AND GRAPE SMOOTHIE

green grapes; one big red apple; 4 ice cubes; 1 cup of milk

-Cut up the apple.  Wash as many grapes as you want to put in the smoothie
-put everything in a blender, ice first
-When you don't hear the ice banging around, she's done
-drink up!

points=2 for the milk


IDAHO FRIES WITH VINEGAR

4 (5oz.) Idaho potatoes; 1 tbsp olive/veggie oil; 1/4 tsp salt; 1/4 freshly ground pepper; 2tbsp white vinegar

-Preheat oven to 450 degrees
-cut potatoes length wise into eighths and then toss wedges in the oil
-put on a a jelly roll pan/ baking sheet and on the lowest rack
-bake for 20 min., flip then bake for 10 min.
-remove from oven, sprinkle the salt and pepper and then the vinegar.

Eight wedges= 3 points (Weight Watchers Greatest Hits)


CHICKEN WITH FETA SAUCE

4 skinless, boneless chicken breasts; 2 tbsp. balsamic vinegar; 1/2 tsp.ground thyme; 2 tsp. olive oil; 1tbsp. + 1.5 tsp. all purpose flour; 1/2 teaspoon ground oregano; 1 cup fat-free milk; 1 cup thawed frozen broccoli, carrot and cauliflower medley; 1/3 cup crumbled feta cheese; 1 tsp. fresh lemon juice; 2 cups white rice

-On wax paper, sprinkle the chicken with the vinegar and thyme
-In large nonstick skillet, heat the oil.
-Cook the chicken until browned and cooked through, 4-5 minutes on each side; transfer to plate
-Sprinkle the flour and oregano over the pan juices, cook, stirring constantly, 1 minute
-Gradually whisk in the milk; cook, whisk constantly until thick and bubbly,2-3 minutes
-Stir in vegetables, cheese and lemon juice
-Reduce heat and simmer until the cheese melts, about 2 minutes
-Place rice on plate, top with chicken, spoon sauce over chicken
